Every data center has a combination of workloads. Some applications, such as databases, require the high performance and low latency of block storage. Other applications are better suited to file sharing. And increasingly, modern applications are taking advantage of the massive capacity object storage offers.

For example, a given system could have six controllers supporting block data, 8 controllers handling file data, and the remaining six writing to an object store. Each controller would support a given protocol at full performance. Protocols can be changed with the click of a button.
This is in contrast to legacy systems which typically run one protocol on a controller and then layer a second protocol on top of the first. The result is extremely poor performance for the second protocol.
That is why so few data centers actually use more than one protocol on a given system. Instead they use the best system for a given data type, which results in data sprawl and management headaches as admins deal with multiple interfaces and vendors.
